Pink Pitaya Smoothie Bowl

I have been making this smoothie bowl so much recently. Sometimes for breakfast, lunch, dinner and even as a dessert! It’s so easy to make and you can add all kinds of toppings. This one is going to be great for those spring & summer months (it will be here before you know it!!) when you just need something cold. Or have it even in the winter like I have been doing lol. Here’s how I make it:

Recipe:

  • 1/2 frozen banana
  • 1 cup frozen pitaya cubes
  • 1/2 – 1 cup almond milk (start with less, that will make it thick and creamy, but you can always add more)
  • 1 scoop vanilla protein powder

Toppings:

  • 1 tablespoon almond butter
  • handful of Kashi cereal
  • drizzle of honey
  • sprinkle of pumpkin seeds

I even add mini chocolate chips sometimes because why not lol.

Directions:

  1. Add banana, pitaya, almond milk, and protein powder into a blender.
  2. Blend until thick and creamy. Add more milk if necessary.
  3. Place in a bowl, add toppings and enjoy!
