I have been making this smoothie bowl so much recently. Sometimes for breakfast, lunch, dinner and even as a dessert! It’s so easy to make and you can add all kinds of toppings. This one is going to be great for those spring & summer months (it will be here before you know it!!) when you just need something cold. Or have it even in the winter like I have been doing lol. Here’s how I make it:
Recipe:
1/2 frozen banana
1 cup frozen pitaya cubes
1/2 – 1 cup almond milk (start with less, that will make it thick and creamy, but you can always add more)
1 scoop vanilla protein powder
Toppings:
1 tablespoon almond butter
handful of Kashi cereal
drizzle of honey
sprinkle of pumpkin seeds
I even add mini chocolate chips sometimes because why not lol.
Directions:
Add banana, pitaya, almond milk, and protein powder into a blender.
Blend until thick and creamy. Add more milk if necessary.

Last year, my roommates and I went to visit friends who were studying abroad in Barcelona, Spain. While the trip was one of the coolest experiences of my life, the food was even better! If you ever get to go there you have to try one of my favorite brunch spots called, none other than, Brunch & Cake (here’s their website if you want to check it out https://brunchandcake.com/en/). They only have locations in Barcelona and Dubai at the moment, but I definitely think it would be a flooded with business and thrive in cities like Boston, New York, or (even my favorite) Hoboken. Their company philosophy is “a life dedicated to whole foods” and let me just say that their menu is stunning for both your eyes and your taste buds (the cover photo for this post is my delicious meal). They have all kinds of healthy options to choose from and can accommodate any kind of dietary restriction (gluten free, low carb, paleo, plus an entire vegan menu). I ordered the “next level avocado toast” which was thick cut olive sourdough, grated tomato & olive oil, avocado feta smash, topped with your own syringe filled with more fresh avocado. It was literally unreal! (see picture below) If only they weren’t located halfway across the world so I could get takeout right now :(( Definitely will be (trying to) recreate this masterpiece.
