I have been making this smoothie bowl so much recently. Sometimes for breakfast, lunch, dinner and even as a dessert! It’s so easy to make and you can add all kinds of toppings. This one is going to be great for those spring & summer 

Blueberry & Pecan Oatmeal

Blueberry & Pecan Oatmeal

Breakfast made easy! This oatmeal recipe keeps you full for hours but only takes a few minutes to make. You can even prep these overnight and have them ready to go first thing in the morning! Here is the recipe.

Recipe:

  • 1/2 cup rolled oats (Bob’s Red Mill Organic Rolled Oats are my favorite but you can use any brand you prefer)
  • 1/2 cup – 3/4 cup almond milk (depending on how thick you want it)
  • 1/2 banana
  • 1 scoop plant based protein powder (I like to use the peanut butter or vanilla flavors from Orgain)
  • Handful of blueberries (or any fruit of your choice, I also like to use strawberries)
  • About 10 halves of pecans
  • Sprinkle of cinnamon

Directions:

  1. Combine rolled oats, almond milk, banana, & protein powder in a small sauce pan. Mash the banana with a fork and mix all the ingredients together. Heat over medium heat while stirring occasionally until thick and creamy.
  2. While that is cooking, chop pecans into small pieces.
  3. Pour into small bowl and add blueberries, pecan pieces, and cinnamon. That’s it, hope you enjoy!

For the overnight version combine rolled oats, almond milk, banana, & protein powder into a mason jar (the mason jar is great if you want to heat everything up in the microwave in the morning) but any type of container that you can close and keep in the fridge overnight works too! Mash the banana with a fork and mix all the ingredients together. Set aside in the fridge overnight and either heat up or eat cold in the morning. And don’t forget to add your toppings as well!

Last year, my roommates and I went to visit friends who were studying abroad in Barcelona, Spain. While the trip was one of the coolest experiences of my life, the food was even better! If you ever get to go there you have to try
